Steps
- Peel and slice the potatoes into thin rounds, about 2-3 mm thick.
- Finely chop the onion.
- In a large non-stick skillet, heat 3 tablespoons of olive oil over medium heat.
- Add the sliced potatoes and chopped onion to the skillet, season with salt, and cook gently for about 15-20 minutes, stirring occasionally, until the potatoes are tender but not browned.
- While the potatoes are cooking, crack the eggs into a bowl, add a pinch of salt and black pepper, and whisk until well combined.
- Once the potatoes and onions are cooked, drain them from the oil and let them cool slightly.
