Ingredients

  • Large eggs - 4
  • Potatoes - 300 grams

Steps

  1. Peel and slice the potatoes into thin rounds, about 2-3 mm thick.
  2. Finely chop the onion.
  3. In a large non-stick skillet, heat 3 tablespoons of olive oil over medium heat.
  4. Add the sliced potatoes and chopped onion to the skillet, season with salt, and cook gently for about 15-20 minutes, stirring occasionally, until the potatoes are tender but not browned.
  5. While the potatoes are cooking, crack the eggs into a bowl, add a pinch of salt and black pepper, and whisk until well combined.
  6. Once the potatoes and onions are cooked, drain them from the oil and let them cool slightly.
  7. Combine the potato and onion mixture with the beaten eggs in a large bowl, mixing gently to avoid breaking the potatoes.
  8. Wipe the skillet clean and return it to the heat, adding the remaining tablespoon of olive oil.
  9. Pour the egg and potato mixture into the skillet, spreading it evenly.
  10. Cook on medium-low heat for about 5-7 minutes until the edges start to set.
  11. Using a large plate, carefully flip the tortilla over and cook the other side for an additional 5-7 minutes until fully set and lightly browned.
  12. Slide the tortilla onto a serving plate, allow it to cool slightly, then cut it into wedges and serve warm or at room temperature.
