Ingredients

  • Potatoes - 300 grams
  • Olive oil - 4 tablespoons

  • Red bell pepper - 1 small, finely chopped
  • Shrimp - 100 grams, peeled and deveined
  • Calamari - 100 grams, sliced
  • Eggs - 4 large
  • Salt - to taste
  • Black pepper - to taste
  • Chopped parsley - 1 tablespoon (for garnish)

Steps

  1. Peel and thinly slice the potatoes into rounds. Rinse and drain them to remove excess starch.
  2. In a large non-stick skillet, heat 3 tablespoons of olive oil over medium heat. Add the sliced potatoes and cook for about 10-12 minutes, stirring occasionally, until tender but not browned. Remove the potatoes and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion, garlic, and red bell pepper until softened, about 5 minutes.
  4. Add the shrimp and calamari to the skillet and cook for an additional 3-4 minutes until the seafood is opaque and cooked through. Season with salt and black pepper.
  5. In a large bowl, whisk the eggs together and season with a pinch of salt and black pepper. Gently fold in the cooked potatoes and seafood mixture until well combined.
  6. Wipe the skillet clean and return it to the stove over medium-low heat. Pour the mixture into the skillet and cook for about 5-7 minutes, until the edges begin to set.
  7. Carefully flip the tortilla using a large plate or lid; cook the other side for another 5 minutes until fully set and lightly browned.
  8. Slide the tortilla onto a serving plate, garnish with chopped parsley, and let it rest for a few minutes before slicing and serving.
