- Red bell pepper - 1 small, finely chopped
- Shrimp - 100 grams, peeled and deveined
- Calamari - 100 grams, sliced
- Eggs - 4 large
- Salt - to taste
- Black pepper - to taste
- Chopped parsley - 1 tablespoon (for garnish)
Steps
- Peel and thinly slice the potatoes into rounds. Rinse and drain them to remove excess starch.
- In a large non-stick skillet, heat 3 tablespoons of olive oil over medium heat. Add the sliced potatoes and cook for about 10-12 minutes, stirring occasionally, until tender but not browned. Remove the potatoes and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion, garlic, and red bell pepper until softened, about 5 minutes.
- Add the shrimp and calamari to the skillet and cook for an additional 3-4 minutes until the seafood is opaque and cooked through. Season with salt and black pepper.
- In a large bowl, whisk the eggs together and season with a pinch of salt and black pepper. Gently fold in the cooked potatoes and seafood mixture until well combined.
- Wipe the skillet clean and return it to the stove over medium-low heat. Pour the mixture into the skillet and cook for about 5-7 minutes, until the edges begin to set.
- Carefully flip the tortilla using a large plate or lid; cook the other side for another 5 minutes until fully set and lightly browned.
- Slide the tortilla onto a serving plate, garnish with chopped parsley, and let it rest for a few minutes before slicing and serving.
