  • Zucchini - 2 medium
  • Eggs - 4 large
  • Potatoes - 200 grams, peeled and diced

  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chorizo - 100 grams, diced (optional for added flavor)
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Slice the zucchini into 1 cm thick rounds. Lightly salt the slices and set aside to release moisture for about 10 minutes.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and cook until golden and tender, about 15 minutes, stirring occasionally.
  3. Add the chopped onion to the skillet with the potatoes and cook for an additional 5 minutes until the onion is translucent. If using, add the diced chorizo and sauté for another 3 minutes.
  4. In a bowl, whisk the eggs and season with salt and black pepper. Pour the egg mixture over the potato, onion, and chorizo mixture in the skillet. Cook on low heat until the eggs begin to set, about 5-7 minutes.
  5. Preheat another skillet over medium heat and add the remaining olive oil. In batches, cook the zucchini slices for about 2-3 minutes on each side until golden and slightly softened.
  6. Once the tortilla is set, carefully slide it onto a plate and cut it into two equal portions. Assemble the burger by placing a tortilla slice between two zucchini rounds.
  7. Garnish with fresh parsley and serve warm.
