Ingredients

  • Eggs - 4 large
  • Fresh spinach - 150 grams
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and diced red bell pepper, sautéing until the onion is translucent, about 5 minutes.
  2. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and black pepper, then remove from heat and let cool slightly.
  3. In a mixing bowl, whisk together the eggs until well combined. Stir in the sautéed vegetables and crumbled feta cheese.
  4. Wipe the skillet clean and add the remaining tablespoon of olive oil over medium heat. Pour the egg and vegetable mixture into the skillet, spreading it evenly.
  5. Cook for about 5-7 minutes, or until the bottom is set and lightly golden. Carefully flip the tortilla using a plate, and cook the other side for an additional 5-7 minutes until fully cooked.
  6. Once cooked, slide the tortilla onto a serving plate, slice into wedges, and serve warm or at room temperature.
