- Eggs - 4 large
- Fresh spinach - 150 grams
- Red bell pepper - 1 medium, diced
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled
Steps
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and diced red bell pepper, sautéing until the onion is translucent, about 5 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and black pepper, then remove from heat and let cool slightly.
- In a mixing bowl, whisk together the eggs until well combined. Stir in the sautéed vegetables and crumbled feta cheese.
- Wipe the skillet clean and add the remaining tablespoon of olive oil over medium heat. Pour the egg and vegetable mixture into the skillet, spreading it evenly.
- Cook for about 5-7 minutes, or until the bottom is set and lightly golden. Carefully flip the tortilla using a plate, and cook the other side for an additional 5-7 minutes until fully cooked.
- Once cooked, slide the tortilla onto a serving plate, slice into wedges, and serve warm or at room temperature.
