Ingredients
- Spaghetti - 150 grams
- Eggs - 4 large
- Red bell pepper - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large bowl, whisk together the eggs, salt, and black pepper until well combined.
- In a non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
- Add the diced red bell pepper and green peas to the skillet, and cook for another 2-3 minutes until the vegetables are tender.
- Incorporate the cooked spaghetti into the vegetable mixture, mixing well.
- Pour the egg mixture over the spaghetti and vegetables. Gently stir to combine, ensuring the spaghetti is evenly coated with the eggs.
- Sprinkle the grated Parmesan cheese on top, and let the mixture cook for about 5-7 minutes, or until the edges start to set.
- Using a large plate, carefully flip the tortilla over to cook the other side, then slide it back into the skillet. Cook for an additional 5-7 minutes until fully set and golden brown.
- Once fully cooked, remove from heat and let it cool for a few minutes. Garnish with chopped parsley before slicing and serving.
