Ingredients

  • Spaghetti - 150 grams
  • Eggs - 4 large
  • Red bell pepper - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large bowl, whisk together the eggs, salt, and black pepper until well combined.
  3. In a non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.
  4. Add the diced red bell pepper and green peas to the skillet, and cook for another 2-3 minutes until the vegetables are tender.
  5. Incorporate the cooked spaghetti into the vegetable mixture, mixing well.
  6. Pour the egg mixture over the spaghetti and vegetables. Gently stir to combine, ensuring the spaghetti is evenly coated with the eggs.
  7. Sprinkle the grated Parmesan cheese on top, and let the mixture cook for about 5-7 minutes, or until the edges start to set.
  8. Using a large plate, carefully flip the tortilla over to cook the other side, then slide it back into the skillet. Cook for an additional 5-7 minutes until fully set and golden brown.
  9. Once fully cooked, remove from heat and let it cool for a few minutes. Garnish with chopped parsley before slicing and serving.
