Ingredients

  • Eggs - 4 large
  • Chorizo sausage - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Green onion - 2, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the diced chorizo and sauté for about 3-4 minutes until it starts to release its oil and becomes slightly crispy.
  3. Add the diced red bell pepper and chopped green onion to the skillet, cooking for an additional 2-3 minutes until softened.
  4. In a bowl, whisk the eggs with salt and black pepper until well combined.
  5. Pour the egg mixture over the chorizo and vegetables in the skillet, ensuring it is evenly distributed.
  6. Reduce the heat to low and cover the skillet with a lid. Cook for 5-7 minutes or until the eggs are set around the edges but still slightly runny on top.
  7. Carefully flip the tortilla using a large plate or lid to cook the other side for an additional 3-4 minutes until fully set.
  8. Once cooked, slide the tortilla onto a plate and let it cool for a few minutes before slicing into wedges.
