- Chickpea flour - 100 grams
- Water - 100 ml
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
Steps
- In a mixing bowl, combine the chickpea flour, water, paprika, salt, and black pepper to form a smooth batter. Let it rest for 10 minutes.
- In a frying pan, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the shrimp to the pan and cook until pink and opaque, about 3-4 minutes. Remove from heat and let cool slightly.
- Mix the cooked shrimp and chopped parsley into the rested batter until well combined.
- In the same pan, add the remaining tablespoon of olive oil and heat over medium-high heat.
- Pour the shrimp and batter mixture into the pan, spreading it evenly. Cook for about 5-7 minutes until the bottom is golden brown.
- Carefully flip the tortilla using a large plate, then cook the other side for an additional 5-7 minutes until fully cooked and golden brown.
- Transfer to a serving plate, slice into wedges, and serve warm.
