Ingredients

  • Large shrimp - 200 grams, peeled and deveined
  • Eggs - 4 large
  • Chickpea flour - 100 grams
  • Water - 100 ml
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. In a mixing bowl, combine the chickpea flour, water, paprika, salt, and black pepper to form a smooth batter. Let it rest for 10 minutes.
  2. In a frying pan, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the shrimp to the pan and cook until pink and opaque, about 3-4 minutes. Remove from heat and let cool slightly.
  4. Mix the cooked shrimp and chopped parsley into the rested batter until well combined.
  5. In the same pan, add the remaining tablespoon of olive oil and heat over medium-high heat.
  6. Pour the shrimp and batter mixture into the pan, spreading it evenly. Cook for about 5-7 minutes until the bottom is golden brown.
  7. Carefully flip the tortilla using a large plate, then cook the other side for an additional 5-7 minutes until fully cooked and golden brown.
  8. Transfer to a serving plate, slice into wedges, and serve warm.
