- Fresh parsley - 1 tablespoon (chopped)
Steps
- Wash and thinly slice the zucchini.
- Dice the onion and red bell pepper.
- In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion and red bell pepper to the skillet and sauté for 3-4 minutes until softened.
- Add the sliced zucchini to the skillet and cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender.
- In a mixing bowl, whisk together the eggs, salt, black pepper, and chopped parsley.
- Once the vegetables are cooked, pour the egg mixture over the sautéed vegetables in the skillet.
- Reduce the heat to low and cook for 8-10 minutes, or until the eggs are set around the edges.
- Carefully flip the tortilla using a large plate, and cook the other side for another 5 minutes until golden brown.
