Ingredients

  • Zucchini - 200 grams
  • Eggs - 4 large
  • Onion - 50 grams
  • Red bell pepper - 50 grams
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon (chopped)

Steps

  1. Wash and thinly slice the zucchini.
  2. Dice the onion and red bell pepper.
  3. In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
  4. Add the diced onion and red bell pepper to the skillet and sauté for 3-4 minutes until softened.
  5. Add the sliced zucchini to the skillet and cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender.
  6. In a mixing bowl, whisk together the eggs, salt, black pepper, and chopped parsley.
  7. Once the vegetables are cooked, pour the egg mixture over the sautéed vegetables in the skillet.
  8. Reduce the heat to low and cook for 8-10 minutes, or until the eggs are set around the edges.
  9. Carefully flip the tortilla using a large plate, and cook the other side for another 5 minutes until golden brown.
  10. Slide the tortilla onto a serving plate, slice into wedges, and enjoy warm.
