Ingredients

  • Fresh Swiss chard - 200 grams
  • Large eggs - 4
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Wash and chop the Swiss chard into bite-sized pieces, discarding the tough stems.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the chopped Swiss chard to the skillet and cook until wilted, about 3-4 minutes. Season with salt and black pepper.
  4. In a bowl, crack the eggs and whisk them until well combined. Stir in the sautéed chard mixture.
  5. In the same skillet, heat the remaining tablespoon of olive oil over medium-low heat. Pour the egg and chard mixture into the skillet.
  6. Cook for about 5-7 minutes, or until the edges start to set. Carefully flip the tortilla using a plate and cook the other side for another 5 minutes until fully set.
  7. Slide the tortilla onto a serving plate, slice into wedges, and serve warm.
