- Fresh Swiss chard - 200 grams
- Large eggs - 4
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Wash and chop the Swiss chard into bite-sized pieces, discarding the tough stems.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the chopped Swiss chard to the skillet and cook until wilted, about 3-4 minutes. Season with salt and black pepper.
- In a bowl, crack the eggs and whisk them until well combined. Stir in the sautéed chard mixture.
- In the same skillet, heat the remaining tablespoon of olive oil over medium-low heat. Pour the egg and chard mixture into the skillet.
- Cook for about 5-7 minutes, or until the edges start to set. Carefully flip the tortilla using a plate and cook the other side for another 5 minutes until fully set.
- Slide the tortilla onto a serving plate, slice into wedges, and serve warm.
