Tortilla Burger
The Tortilla Burger is a vegetarian delight that combines traditional Spanish flavors with the beloved format of a burger. This dish features a hearty potato and onion tortilla served between two soft tortillas, garnished with fresh aioli and vegetables.

Ingredients
- 2 medium potatoes - 300g
- 1 small onion - 100g
- 4 large eggs - 240g
- 2 tablespoons olive oil - 30ml
- Salt - to taste
- Black pepper - to taste
- 2 large flour tortillas - 200g
- 1 ripe tomato - 100g
- Lettuce leaves - 50g
- 100g aioli (store-bought or homemade)
Steps
- Peel and thinly slice the potatoes and onion.
- In a large frying pan, heat the olive oil over medium heat. Add the potatoes and onion, season with salt and pepper, and cook until the potatoes are tender and slightly golden, about 10-12 minutes.
- In a bowl, whisk together the eggs and season with salt and pepper. Once the potatoes and onion are cooked, drain excess oil and pour the egg mixture into the pan. Stir gently to combine.
- Cook on low heat for about 5-7 minutes until the edges begin to set. Carefully flip the tortilla using a large plate and cook the other side for another 5-7 minutes until fully set.
- Once cooked, slide the tortilla onto a cutting board and let it cool slightly before slicing it into two equal halves.
- To assemble the Tortilla Burger, take one flour tortilla, place a half of the tortilla on top, add fresh lettuce, sliced tomato, and a generous dollop of aioli. Top with another tortilla and cut in half if desired.
