  • Egg - 1 large
  • Water - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Mushrooms (mixed varieties) - 150 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Shallot - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated (optional, for serving)

Steps

  1. In a mixing bowl, combine the gluten-free pasta flour, egg, and water. Knead until a smooth dough forms, then wrap it in plastic wrap and let it rest for 20 minutes.
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and shallot, sautéing until translucent, about 2-3 minutes.
  3. Add the finely chopped mushrooms to the skillet, cooking until they release their moisture and become tender, about 5-7 minutes. Stir in the chopped parsley, salt, and black pepper, then remove from heat and let cool.
  4. Roll out the pasta dough on a lightly floured surface to about 2mm thickness. Cut into squares (approximately 7cm x 7cm).
  5. Place a teaspoon of the mushroom filling in the center of each square. Fold the square diagonally to form a triangle, sealing the edges tightly. Bring the two outer corners of the triangle together, pinching to form a tortellini shape.
  6. Bring a large pot of salted water to a boil. Cook the tortellini in batches for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.
  7. Serve the tortellini warm, topped with grated Parmesan cheese if desired.
