  • Asparagus - 150 grams, trimmed and cut into 2 cm pieces
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Heavy cream - 100 ml

  • Salt - to taste
  • Black pepper - to taste
  • Lemon zest - 1 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente, usually about 3-4 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
  3. Add the asparagus pieces to the skillet and cook for 3-4 minutes until they are tender but still crisp.
  4. Reduce the heat to low, then stir in the heavy cream and grated Parmesan cheese. Mix until the cheese is melted and the sauce is smooth.
  5. Add the cooked tortellini to the skillet, tossing gently to coat them with the sauce. Season with salt, black pepper, and lemon zest to taste.
  6. Remove from heat and sprinkle with fresh parsley before serving.
