- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Lemon zest - 1 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente, usually about 3-4 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
- Add the asparagus pieces to the skillet and cook for 3-4 minutes until they are tender but still crisp.
- Reduce the heat to low, then stir in the heavy cream and grated Parmesan cheese. Mix until the cheese is melted and the sauce is smooth.
- Add the cooked tortellini to the skillet, tossing gently to coat them with the sauce. Season with salt, black pepper, and lemon zest to taste.
- Remove from heat and sprinkle with fresh parsley before serving.
