  • green olives - 100 grams, pitted and chopped
  • olive oil - 50 ml
  • plant-based milk - 100 ml
  • baking powder - 1 teaspoon
  • garlic powder - 1 teaspoon
  • dried oregano - 1 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the all-purpose flour, baking powder, garlic powder, dried oregano, salt, and black pepper.
  3. In another bowl, whisk together the olive oil and plant-based milk until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring until a smooth batter forms.
  5. Fold in the chopped black and green olives, along with the fresh parsley, ensuring they are evenly distributed.
  6. Spoon the batter onto the prepared baking tray, forming small cakes approximately 5 cm in diameter.
  7. Bake in the preheated oven for 20 minutes or until golden brown and firm to the touch.
