Ingredients

  • Coconut milk - 200 ml
  • Cashew cream - 100 ml
  • Agar-agar powder - 2 grams
  • Maple syrup - 60 ml
  • Lemon juice - 15 ml
  • Vanilla extract - 1 teaspoon
  • Zest of 1 lemon
  • Salt - a pinch

Steps

  1. In a small saucepan, combine coconut milk, cashew cream, agar-agar powder, and a pinch of salt. Stir well and let it sit for 5 minutes to activate the agar.
  2. Heat the mixture over medium heat, stirring constantly until it reaches a gentle simmer. Once simmering, add the maple syrup, lemon juice, vanilla extract, and lemon zest. Continue stirring for another 5 minutes until everything is well combined and the agar-agar is fully dissolved.
  3. Remove the saucepan from heat and let it cool slightly. Pour the mixture into two individual ramekins or dessert cups.
  4. Refrigerate for at least 2 hours, or until set completely. Once set, you can serve it chilled, garnished with fresh berries or a sprinkle of crushed nuts if desired.
