Ingredients

  • Fresh mussels - 12 large
  • Canned tuna in olive oil - 100 grams, drained
  • Breadcrumbs - 50 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Red bell pepper - 1/2, finely chopped
  • Parsley - 2 tablespoons, chopped
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Clean the mussels under cold running water and remove any beards.
  3. In a pot, bring water to a boil and add the mussels. Cook for about 5-7 minutes until they open. Discard any that do not open.
  4. Remove the top shell from the mussels and place the bottom shell on a baking tray.
  5. In a skillet, heat olive oil over medium heat and sauté the onion, garlic, and red bell pepper until soft.
  6. In a bowl, combine the sautéed vegetables with the drained tuna, breadcrumbs, parsley, paprika, salt, and pepper. Mix well.
  7. Spoon the filling into each mussel shell, packing it tightly.
  8. Bake the stuffed mussels in the preheated oven for 10-12 minutes until golden brown.
  9. Serve hot, garnished with lemon wedges.
