- Mussels - 12 large, cleaned
- Red bell pepper - 1, finely chopped
- Green bell pepper - 1, finely chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Chorizo (sugar-free) - 100 grams, diced
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Sea salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 200°C (390°F).
- In a skillet, heat the olive oil over medium heat and sauté the onion, red bell pepper, and green bell pepper until softened, about 5-7 minutes.
- Add the minced garlic and diced chorizo to the skillet, cooking for another 3-4 minutes until the chorizo is browned.
- Stir in the paprika, cayenne pepper, parsley, lemon juice, salt, and black pepper, mixing well. Remove from heat.
- Place the cleaned mussel shells on a baking tray, and spoon the chorizo mixture generously into each shell.
- Bake in the preheated oven for about 12-15 minutes until the mussels are heated through and slightly crispy on top.
- Serve hot, garnished with additional parsley and lemon wedges if desired.
