Ingredients

  • Mussels - 12 large, cleaned
  • Red bell pepper - 1, finely chopped
  • Green bell pepper - 1, finely chopped
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Chorizo (sugar-free) - 100 grams, diced
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Sea salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (390°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the onion, red bell pepper, and green bell pepper until softened, about 5-7 minutes.
  3. Add the minced garlic and diced chorizo to the skillet, cooking for another 3-4 minutes until the chorizo is browned.
  4. Stir in the paprika, cayenne pepper, parsley, lemon juice, salt, and black pepper, mixing well. Remove from heat.
  5. Place the cleaned mussel shells on a baking tray, and spoon the chorizo mixture generously into each shell.
  6. Bake in the preheated oven for about 12-15 minutes until the mussels are heated through and slightly crispy on top.
  7. Serve hot, garnished with additional parsley and lemon wedges if desired.
