Ingredients

  • Mussels - 500 grams
  • Chorizo sausage - 100 grams, finely chopped
  • Almonds - 50 grams, ground
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, for zest and juice

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the mussels under cold water, discarding any that are open and don't close when tapped.
  3. In a skillet, heat olive oil over medium heat and add the finely chopped chorizo. Cook for about 5 minutes until the chorizo is browned.
  4. Add minced garlic and paprika to the skillet, stirring for another minute until fragrant.
  5. Remove the skillet from heat and mix in the ground almonds, chopped parsley, lemon zest, salt, and black pepper.
  6. Place the mussels in a baking dish, opening them slightly, and fill each mussel with the chorizo and almond mixture.
  7. Drizzle with lemon juice and bake in the preheated oven for 10-12 minutes until the mussels are cooked and the topping is golden.
  8. Remove from oven and let cool slightly before serving. Garnish with additional parsley if desired.
