- Mussels - 500 grams
- Chorizo sausage - 100 grams, finely chopped
- Almonds - 50 grams, ground
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, for zest and juice
Steps
- Preheat the oven to 200°C (400°F).
- Rinse the mussels under cold water, discarding any that are open and don't close when tapped.
- In a skillet, heat olive oil over medium heat and add the finely chopped chorizo. Cook for about 5 minutes until the chorizo is browned.
- Add minced garlic and paprika to the skillet, stirring for another minute until fragrant.
- Remove the skillet from heat and mix in the ground almonds, chopped parsley, lemon zest, salt, and black pepper.
- Place the mussels in a baking dish, opening them slightly, and fill each mussel with the chorizo and almond mixture.
- Drizzle with lemon juice and bake in the preheated oven for 10-12 minutes until the mussels are cooked and the topping is golden.
- Remove from oven and let cool slightly before serving. Garnish with additional parsley if desired.
