- Lemon juice - 2 tablespoons
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red bell pepper - 1, sliced
- Zucchini - 1, sliced
- Cherry tomatoes - 200 grams
Steps
- In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, sea salt, and black pepper to create the marinade.
- Cut the beef sirloin into two equal pieces and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat the grill to medium-high heat.
- While the grill is heating, prepare the vegetables by tossing the sliced red bell pepper, zucchini, and cherry tomatoes in a little olive oil, salt, and pepper.
- Once the grill is hot, remove the beef from the marinade and place it on the grill. Cook for about 6-7 minutes per side for medium-rare, or until desired doneness.
- During the last few minutes of grilling, add the prepared vegetables to the grill, cooking until they are tender and slightly charred, about 5-7 minutes.
- Remove the grilled beef and vegetables from the grill and let the beef rest for 5 minutes before slicing.
- Serve the sliced beef alongside the grilled vegetables, drizzled with any remaining marinade if desired.
