- Greek yogurt - 200 grams
- Honey - 2 tablespoons
- Lemon juice - 1 tablespoon
- Lemon zest - 1 teaspoon
- Almond flour - 50 grams
- Oats - 30 grams
- Coconut oil - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Fresh berries (for topping) - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, oats, and melted coconut oil. Mix well until crumbly.
- Press the mixture into the bottom of a small tart pan to form the crust. Bake for 10-12 minutes until lightly golden.
- While the crust is baking, mix Greek yogurt, honey, lemon juice, lemon zest, and vanilla extract in a bowl until smooth.
- Once the crust is done, remove it from the oven and let it cool for a few minutes.
- Pour the yogurt mixture into the cooled crust and smooth the top with a spatula.
- Chill the tart in the refrigerator for at least 15 minutes before serving.
- Top with fresh berries before serving.
