Ingredients

  • Greek yogurt - 200 grams
  • Honey - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Lemon zest - 1 teaspoon
  • Almond flour - 50 grams
  • Oats - 30 grams
  • Coconut oil - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Fresh berries (for topping) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, oats, and melted coconut oil. Mix well until crumbly.
  3. Press the mixture into the bottom of a small tart pan to form the crust. Bake for 10-12 minutes until lightly golden.
  4. While the crust is baking, mix Greek yogurt, honey, lemon juice, lemon zest, and vanilla extract in a bowl until smooth.
  5. Once the crust is done, remove it from the oven and let it cool for a few minutes.
  6. Pour the yogurt mixture into the cooled crust and smooth the top with a spatula.
  7. Chill the tart in the refrigerator for at least 15 minutes before serving.
  8. Top with fresh berries before serving.
