- Cream cheese - 250 grams
- Greek yogurt - 100 grams
- Sugar - 75 grams
- Eggs - 2 large
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 teaspoon
- Cornstarch - 2 tablespoons
- Butter - 25 grams (for greasing the pan)
Steps
- Preheat the oven to 170°C (340°F).
- Grease a 20 cm (8 inch) round springform pan with butter.
- In a mixing bowl, combine the cream cheese and Greek yogurt, and beat until smooth.
- Add the sugar, eggs, vanilla extract, lemon zest, and cornstarch to the bowl, and mix until well combined and creamy.
- Pour the mixture into the prepared springform pan and smooth the top with a spatula.
- Bake in the preheated oven for 30 minutes or until the edges are set but the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional 10 minutes.
- Remove from the oven and let it cool to room temperature before transferring to the refrigerator to chill for at least 2 hours.
- Serve chilled, optionally garnished with fresh fruit or a dusting of powdered sugar.
