  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, baking powder, and salt.
  3. In another bowl, whisk together melted coconut oil, honey, egg, and vanilla extract until well blended.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Press the dough into the bottom of a small tart pan (approximately 15 cm in diameter) to form the crust, ensuring it's even.
  6. In a separate bowl, mix the diced pineapple with a little honey if you prefer added sweetness.
  7. Spread the pineapple mixture evenly over the crust.
  8. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the pineapple is tender.
  9. Allow the tart to cool for at least 10 minutes before slicing and serving.
