Ingredients
- Digestive biscuits - 100g
- Unsalted butter - 50g, melted
- Cream cheese - 200g, softened
- Powdered sugar - 80g
- Fresh orange juice - 100ml
- Zest of 1 orange
- Gelatin powder - 5g
- Water - 30ml
- Fresh orange segments - for decoration
Steps
- Preheat the oven to 180°C (350°F).
- Crush the digestive biscuits into fine crumbs and mix with the melted butter until combined.
- Press the biscuit mixture into the bottom of a 15cm tart pan to form an even crust and bake for 10 minutes. Remove and let cool.
- In a medium bowl, beat the cream cheese and powdered sugar until smooth and creamy.
- Add the fresh orange juice and zest to the cream cheese mixture, and mix until fully incorporated.
- Dissolve the gelatin in 30ml of warm water, stirring until fully dissolved.
- Incorporate the dissolved gelatin into the cream cheese mixture, mixing well.
- Pour the cream cheese filling into the cooled biscuit crust and smooth the top.
- Refrigerate for at least 2 hours or until set.
- Before serving, decorate with fresh orange segments on top.
