Ingredients

  • Digestive biscuits - 100g
  • Unsalted butter - 50g, melted
  • Cream cheese - 200g, softened
  • Powdered sugar - 80g
  • Fresh orange juice - 100ml
  • Zest of 1 orange
  • Gelatin powder - 5g
  • Water - 30ml
  • Fresh orange segments - for decoration

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Crush the digestive biscuits into fine crumbs and mix with the melted butter until combined.
  3. Press the biscuit mixture into the bottom of a 15cm tart pan to form an even crust and bake for 10 minutes. Remove and let cool.
  4. In a medium bowl, beat the cream cheese and powdered sugar until smooth and creamy.
  5. Add the fresh orange juice and zest to the cream cheese mixture, and mix until fully incorporated.
  6. Dissolve the gelatin in 30ml of warm water, stirring until fully dissolved.
  7. Incorporate the dissolved gelatin into the cream cheese mixture, mixing well.
  8. Pour the cream cheese filling into the cooled biscuit crust and smooth the top.
  9. Refrigerate for at least 2 hours or until set.
  10. Before serving, decorate with fresh orange segments on top.
