  • Salt - 1/4 teaspoon
  • Ice water - 30 ml
  • Fresh blackberries - 150 grams
  • Granulated sugar (for filling) - 50 grams
  • Cornstarch - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Vanilla extract - 1/2 teaspoon
  • Egg - 1 large (for egg wash)

Steps

  1. In a mixing bowl, combine the all-purpose flour, 30 grams of sugar, and salt. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. In a separate bowl, combine the blackberries, 50 grams of sugar, cornstarch, lemon juice, and vanilla extract. Gently toss to coat the blackberries and set aside.
  4. Preheat the oven to 180°C (350°F). Roll out the chilled pastry dough on a floured surface to fit a 6-inch tart pan.
  5. Transfer the rolled dough to the tart pan, trimming any excess. Prick the bottom with a fork to prevent bubbling.
  6. Pour the blackberry mixture into the tart shell, spreading it evenly.
  7. In a small bowl, whisk the egg and brush it over the exposed pastry edges for a golden finish.
  8. Bake the tart in the preheated oven for 25-30 minutes, or until the filling is bubbling and the crust is golden brown.
