Ingredients
- All-purpose flour - 100 grams
- Unsalted margarine - 50 grams
- Sugar - 30 grams
- Salt - a pinch
- Water - 2 tablespoons
- Peaches (fresh or canned) - 200 grams
- Cornstarch - 1 tablespoon
- Cinnamon - 1/2 teaspoon
- Vanilla extract - 1/4 teaspoon
- Agar-agar (optional) - 1/2 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the flour, sugar, and salt. Add the margarine and mix until the mixture resembles coarse crumbs.
- Add water gradually and knead until a dough forms. Wrap it in plastic wrap and refrigerate for 15 minutes.
- While the dough is chilling, prepare the peach filling. If using fresh peaches, peel and slice them; if using canned, drain them well.
- In a pot, combine the sliced peaches, cornstarch, cinnamon, vanilla extract, and agar-agar (if using) over medium heat. Cook for about 5 minutes, stirring gently until the peaches soften and the mixture thickens slightly.
- Remove the dough from the refrigerator and roll it out on a floured surface to fit a small tart pan (about 15 cm in diameter).
- Press the rolled dough into the tart pan, ensuring even coverage on the bottom and sides.
- Pour the peach filling into the prepared crust, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Allow to cool slightly before slicing and serving warm or at room temperature.
