Ingredients

  • All-purpose flour - 100 grams
  • Unsalted margarine - 50 grams
  • Sugar - 30 grams
  • Salt - a pinch
  • Water - 2 tablespoons
  • Peaches (fresh or canned) - 200 grams
  • Cornstarch - 1 tablespoon
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1/4 teaspoon
  • Agar-agar (optional) - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour, sugar, and salt. Add the margarine and mix until the mixture resembles coarse crumbs.
  3. Add water gradually and knead until a dough forms. Wrap it in plastic wrap and refrigerate for 15 minutes.
  4. While the dough is chilling, prepare the peach filling. If using fresh peaches, peel and slice them; if using canned, drain them well.
  5. In a pot, combine the sliced peaches, cornstarch, cinnamon, vanilla extract, and agar-agar (if using) over medium heat. Cook for about 5 minutes, stirring gently until the peaches soften and the mixture thickens slightly.
  6. Remove the dough from the refrigerator and roll it out on a floured surface to fit a small tart pan (about 15 cm in diameter).
  7. Press the rolled dough into the tart pan, ensuring even coverage on the bottom and sides.
  8. Pour the peach filling into the prepared crust, spreading it evenly.
  9. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  10. Allow to cool slightly before slicing and serving warm or at room temperature.
