Ingredients
- Graham cracker crumbs - 100 grams
- Unsalted margarine - 50 grams, melted
- Granulated sugar - 30 grams
- Passion fruit pulp - 150 grams (about 3-4 fruits)
- Cream cheese - 100 grams, softened
- Sour cream - 100 grams
- Powdered sugar - 50 grams
- Lemon juice - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Gelatin powder - 1 teaspoon
- Water - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the graham cracker crumbs, melted margarine, and granulated sugar until well mixed.
- Press the mixture into the bottom of a small tart pan (approximately 15 cm in diameter) to form the crust. Bake for 10 minutes, then allow to cool.
- In another bowl, mix the passion fruit pulp, cream cheese, sour cream, powdered sugar, lemon juice, and vanilla extract until smooth and creamy.
- In a small bowl, dissolve the gelatin powder in 2 tablespoons of hot water, stirring until completely dissolved.
- Add the dissolved gelatin to the cream cheese mixture and blend until well combined.
- Pour the passion fruit mixture into the cooled crust and smooth the top.
- Refrigerate the tart for at least 30 minutes or until set.
- Once set, slice and serve chilled, optionally garnished with extra passion fruit pulp or fresh mint.
