- all-purpose flour - 150 grams
- unsalted butter - 75 grams, chilled and cubed
- granulated sugar - 50 grams
- ice water - 2 tablespoons
- medium apples (such as Granny Smith) - 2, peeled and sliced
- cinnamon powder - 1 teaspoon
- lemon juice - 1 tablespoon
- brown sugar - 25 grams
- egg (for egg wash) - 1, beaten
- vanilla extract - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the flour and granulated sugar. Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- While the dough is chilling, prepare the filling. In a large bowl, combine the sliced apples, lemon juice, cinnamon, brown sugar, and vanilla extract. Toss until the apples are evenly coated.
- Once the dough has chilled, roll it out on a floured surface to fit a 20 cm (8 inch) tart pan. Transfer the dough to the pan and trim any excess.
- Pour the apple mixture into the prepared crust, spreading it evenly.
- Brush the edges of the crust with the beaten egg to give it a golden color when baked.
- Bake in the preheated oven for 30-35 minutes, or until the apples are tender and the crust is golden brown.
- Allow to cool slightly before slicing and serving.
