Ingredients

  • all-purpose flour - 150 grams
  • unsalted butter - 75 grams, chilled and cubed
  • granulated sugar - 50 grams
  • ice water - 2 tablespoons
  • medium apples (such as Granny Smith) - 2, peeled and sliced
  • cinnamon powder - 1 teaspoon
  • lemon juice - 1 tablespoon
  • brown sugar - 25 grams
  • egg (for egg wash) - 1, beaten
  • vanilla extract - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour and granulated sugar. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. While the dough is chilling, prepare the filling. In a large bowl, combine the sliced apples, lemon juice, cinnamon, brown sugar, and vanilla extract. Toss until the apples are evenly coated.
  5. Once the dough has chilled, roll it out on a floured surface to fit a 20 cm (8 inch) tart pan. Transfer the dough to the pan and trim any excess.
  6. Pour the apple mixture into the prepared crust, spreading it evenly.
  7. Brush the edges of the crust with the beaten egg to give it a golden color when baked.
  8. Bake in the preheated oven for 30-35 minutes, or until the apples are tender and the crust is golden brown.
  9. Allow to cool slightly before slicing and serving.
