Ingredients

  • Mango - 200 grams (peeled and diced)
  • Sugar - 50 grams
  • Cream cheese - 100 grams (softened)
  • Greek yogurt - 50 grams
  • Lemon juice - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Gelatin powder - 1 teaspoon
  • Water - 2 tablespoons (for gelatin)
  • Graham cracker crumbs - 50 grams
  • Butter - 30 grams (melted)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, then press the mixture into the bottom of two individual tart pans to form a crust.
  3. Bake the crusts in the preheated oven for 10 minutes, then remove and let cool.
  4. In a small bowl, dissolve the gelatin in 2 tablespoons of warm water and set aside.
  5. In a separate mixing bowl, blend the cream cheese, Greek yogurt, sugar, lemon juice, and vanilla extract until smooth.
  6. Gently fold in the diced mango, then add the dissolved gelatin and mix until well combined.
  7. Pour the mango filling into the cooled crusts and smooth the top with a spatula.
  8. Refrigerate for at least 2 hours to set before serving.
