  • Heavy cream - 120 ml
  • Vanilla extract - 1 teaspoon
  • Unsalted butter - 30 grams, melted
  • All-purpose flour - 50 grams
  • Baking powder - 1/2 teaspoon
  • Pinch of salt
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, whisk together the eggs and granulated sugar until pale and fluffy.
  3. Add the melted butter, heavy cream, vanilla extract, mandarin juice, and mandarin zest to the egg mixture, and stir until well combined.
  4. In a separate bowl, sift together the flour, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
