- All-purpose flour - 100g
- Unsalted butter - 50g (cold and diced)
- Powdered sugar - 25g
- Egg yolk - 1 large
- Ice water - 2 tablespoons
- Lemons - 2 (for juice and zest)
- Granulated sugar - 100g
- Eggs - 2 large
- Cornstarch - 15g
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour, powdered sugar, and a pinch of salt.
- Add the cold diced butter to the flour mixture and rub it in with your fingertips until it resembles coarse crumbs.
- Stir in the egg yolk and ice water until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
- Roll out the chilled dough on a lightly floured surface to fit a 20 cm tart pan. Press it into the pan and trim the edges.
- Prick the bottom of the pastry with a fork and bake for 15 minutes or until lightly golden. Let cool.
- In a bowl, whisk together the lemon juice, lemon zest, granulated sugar, eggs, cornstarch, vanilla extract, and a pinch of salt until smooth.
- Pour the lemon filling into the cooled crust and bake for another 25 minutes until set.
- Allow the tart to cool completely before serving. Optionally, dust with powdered sugar before serving.
