Ingredients

  • All-purpose flour - 100g
  • Unsalted butter - 50g (cold and diced)
  • Powdered sugar - 25g
  • Egg yolk - 1 large
  • Ice water - 2 tablespoons
  • Lemons - 2 (for juice and zest)
  • Granulated sugar - 100g
  • Eggs - 2 large
  • Cornstarch - 15g
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour, powdered sugar, and a pinch of salt.
  3. Add the cold diced butter to the flour mixture and rub it in with your fingertips until it resembles coarse crumbs.
  4. Stir in the egg yolk and ice water until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
  5. Roll out the chilled dough on a lightly floured surface to fit a 20 cm tart pan. Press it into the pan and trim the edges.
  6. Prick the bottom of the pastry with a fork and bake for 15 minutes or until lightly golden. Let cool.
  7. In a bowl, whisk together the lemon juice, lemon zest, granulated sugar, eggs, cornstarch, vanilla extract, and a pinch of salt until smooth.
  8. Pour the lemon filling into the cooled crust and bake for another 25 minutes until set.
  9. Allow the tart to cool completely before serving. Optionally, dust with powdered sugar before serving.
