- All-purpose flour - 100g
- Unsalted vegan butter - 50g
- Powdered sugar - 25g
- Salt - 1g
- Cold water - 2 tablespoons
- Almond milk - 200ml
- Cornstarch - 20g
- Vanilla extract - 1 teaspoon
- Kiwi - 2 medium-sized, peeled and sliced
- Agave syrup - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the flour, powdered sugar, and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
- Add cold water, one tablespoon at a time, mixing until the dough comes together. Shape it into a disk, wrap in plastic, and refrigerate for 15 minutes.
- Roll out the dough on a floured surface to fit a 20 cm (8-inch) tart pan. Press the dough into the pan and trim the edges. Prick the bottom with a fork.
- Bake the crust for 15 minutes or until lightly golden. Let it cool completely.
- In a saucepan, whisk together the almond milk, cornstarch, and vanilla extract over medium heat. Stir continuously until the mixture thickens and begins to bubble.
- Pour the custard into the cooled tart crust and smooth the top. Allow it to set in the refrigerator for at least 15 minutes.
- Once set, arrange the sliced kiwi on top of the custard in a decorative manner. Drizzle with agave syrup for added sweetness.
