Ingredients

  • All-purpose flour - 100g
  • Unsalted vegan butter - 50g
  • Powdered sugar - 25g
  • Salt - 1g
  • Cold water - 2 tablespoons
  • Almond milk - 200ml
  • Cornstarch - 20g
  • Vanilla extract - 1 teaspoon
  • Kiwi - 2 medium-sized, peeled and sliced
  • Agave syrup - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour, powdered sugar, and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
  3. Add cold water, one tablespoon at a time, mixing until the dough comes together. Shape it into a disk, wrap in plastic, and refrigerate for 15 minutes.
  4. Roll out the dough on a floured surface to fit a 20 cm (8-inch) tart pan. Press the dough into the pan and trim the edges. Prick the bottom with a fork.
  5. Bake the crust for 15 minutes or until lightly golden. Let it cool completely.
  6. In a saucepan, whisk together the almond milk, cornstarch, and vanilla extract over medium heat. Stir continuously until the mixture thickens and begins to bubble.
  7. Pour the custard into the cooled tart crust and smooth the top. Allow it to set in the refrigerator for at least 15 minutes.
  8. Once set, arrange the sliced kiwi on top of the custard in a decorative manner. Drizzle with agave syrup for added sweetness.
