Ingredients

  • Fresh figs - 200 grams
  • Almond flour - 100 grams
  • Coconut oil, melted - 30 grams
  • Maple syrup - 30 grams
  • Oat milk - 100 ml
  • Cornstarch - 20 grams
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and a pinch of salt. Mix until it forms a dough.
  3. Press the dough into the bottom and sides of a small tart pan (about 15cm in diameter) evenly. Prick the bottom with a fork to prevent bubbling.
  4. Bake the crust in the preheated oven for 10-12 minutes, until lightly golden. Let it cool.
  5. While the crust cools, prepare the filling by whisking together oat milk, cornstarch, vanilla extract, ground cinnamon, lemon juice, and a pinch of salt in a saucepan over medium heat.
  6. Stir continuously until the mixture thickens and begins to bubble. Remove from heat and let cool slightly.
  7. Slice the fresh figs into quarters.
  8. Once the crust is cool, pour the filling into the crust and arrange the sliced figs on top.
  9. Bake the tart for an additional 15-20 minutes, until the figs are softened and the filling is set.
  10. Allow the tart to cool completely before slicing and serving.
