Ingredients

  • All-purpose flour - 125 grams
  • Unsalted butter - 65 grams, cold and cubed
  • Granulated sugar - 30 grams
  • Ice water - 30 ml
  • Milk - 250 ml
  • Vanilla extract - 1 teaspoon
  • Egg yolks - 2
  • Cornstarch - 20 grams
  • Fresh strawberries - 50 grams, sliced
  • Kiwi - 1, peeled and sliced
  • Blueberries - 50 grams
  • Peach - 1, sliced
  • Apricot jam - 2 tablespoons

Steps

  1. In a mixing bowl, combine the all-purpose flour, sugar, and cold butter. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  2. Add ice water a little at a time, mixing until the dough comes together. Shape it into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface to fit a 20 cm tart pan. Press the dough into the pan and trim any excess.
  4. Prick the bottom with a fork and line it with parchment paper. Fill with baking weights or beans and bake for 15 minutes. Remove the weights and parchment and bake for an additional 10 minutes until golden. Let cool.
  5. In a saucepan over medium heat, combine milk and vanilla extract. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
  6. Once the milk is hot, slowly pour it into the egg mixture while whisking constantly. Return the mixture to the saucepan and cook, stirring continuously until thickened, about 2-3 minutes. Remove from heat and let cool slightly.
  7. Pour the pastry cream into the cooled tart shell and spread evenly. Arrange the sliced fruits on top in a decorative pattern.
  8. In a small saucepan, heat the apricot jam until it melts. Brush the melted jam over the fruit to give it a nice glaze.
  9. Chill the tart in the refrigerator for at least 30 minutes before serving.
