Ingredients

  • Whole wheat flour - 200 grams
  • Olive oil - 60 ml
  • Cold water - 60 ml
  • Spinach - 300 grams, fresh
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Nutritional yeast - 2 tablespoons
  • Almond milk - 100 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric - 1/4 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Vegan Parmesan cheese - 30 grams (optional)

Steps

  1. In a large bowl, combine the whole wheat flour and salt. Add the olive oil and mix until crumbly. Gradually add cold water, stirring until the dough comes together. Shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
  2. In a skillet, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a bowl, combine the wilted spinach mixture, nutritional yeast, almond milk, salt, black pepper, turmeric, nutmeg, and vegan Parmesan cheese (if using). Mix well to combine.
  5. Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface to fit your tart pan. Press the dough into the pan and trim the edges.
  6. Pour the spinach filling into the prepared crust, spreading evenly. Bake in the preheated oven for 25-30 minutes or until the crust is golden.
  7. Allow the tart to cool for a few minutes before slicing. Serve warm or at room temperature.
