Tarta de Espinacas is a delightful Spanish spinach tart that combines the earthiness of spinach with a flaky, plant-based crust. This vegan dish is perfect as a side or a light meal, packed with flavor and nutrients.

Ingredients
- Whole wheat flour - 200 grams
- Olive oil - 60 ml
- Cold water - 60 ml
- Spinach - 300 grams, fresh
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Nutritional yeast - 2 tablespoons
- Almond milk - 100 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric - 1/4 teaspoon
- Nutmeg - 1/4 teaspoon
- Vegan Parmesan cheese - 30 grams (optional)
Steps
- In a large bowl, combine the whole wheat flour and salt. Add the olive oil and mix until crumbly. Gradually add cold water, stirring until the dough comes together. Shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
- In a skillet, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the wilted spinach mixture, nutritional yeast, almond milk, salt, black pepper, turmeric, nutmeg, and vegan Parmesan cheese (if using). Mix well to combine.
- Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface to fit your tart pan. Press the dough into the pan and trim the edges.
- Pour the spinach filling into the prepared crust, spreading evenly. Bake in the preheated oven for 25-30 minutes or until the crust is golden.
- Allow the tart to cool for a few minutes before slicing. Serve warm or at room temperature.
