Ingredients

  • Coconut cream - 200 ml
  • Coconut milk - 100 ml
  • Almond flour - 50 g
  • Coconut sugar - 50 g
  • Cornstarch - 30 g
  • Vanilla extract - 1 tsp
  • Lemon juice - 1 tbsp
  • Salt - a pinch
  • Vegan butter - 50 g
  • Whole wheat flour - 100 g
  • Baking powder - 1 tsp

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine whole wheat flour, almond flour, baking powder, and a pinch of salt.
  3. In another bowl, melt the vegan butter and mix it with coconut sugar until well blended.
  4. Add the dry ingredients to the butter mixture and stir until a dough forms.
  5. Press the dough into the base of a small tart pan to form the crust and poke holes with a fork to prevent bubbling.
  6. Bake the crust in the preheated oven for 10-12 minutes until lightly golden.
  7. While the crust is baking, prepare the filling by whisking together coconut cream, coconut milk, cornstarch, vanilla extract, lemon juice, and a pinch of salt in a saucepan over medium heat.
  8. Cook the mixture, stirring constantly, until it thickens (about 5-7 minutes).
  9. Once thickened, pour the filling into the baked tart crust, smoothing it out evenly.
  10. Chill the tart in the refrigerator for at least 30 minutes to allow it to set.
  11. Serve chilled, garnished with toasted coconut flakes or fresh fruit if desired.
