- Whole wheat flour - 100 g

Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine whole wheat flour, almond flour, baking powder, and a pinch of salt.
- In another bowl, melt the vegan butter and mix it with coconut sugar until well blended.
- Add the dry ingredients to the butter mixture and stir until a dough forms.
- Press the dough into the base of a small tart pan to form the crust and poke holes with a fork to prevent bubbling.
- Bake the crust in the preheated oven for 10-12 minutes until lightly golden.
- While the crust is baking, prepare the filling by whisking together coconut cream, coconut milk, cornstarch, vanilla extract, lemon juice, and a pinch of salt in a saucepan over medium heat.
- Cook the mixture, stirring constantly, until it thickens (about 5-7 minutes).
- Once thickened, pour the filling into the baked tart crust, smoothing it out evenly.
- Chill the tart in the refrigerator for at least 30 minutes to allow it to set.
- Serve chilled, garnished with toasted coconut flakes or fresh fruit if desired.
