Ingredients

  • White chocolate - 100 grams
  • Unsalted butter - 50 grams
  • Cream cheese - 100 grams
  • Granulated sugar - 30 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Digestive biscuits - 100 grams
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a food processor, crush the digestive biscuits until fine crumbs form.
  3. Melt the unsalted butter in a small saucepan over low heat, then mix it with the crushed biscuits until well combined.
  4. Press the biscuit mixture into the bottom of a small tart pan (about 15 cm in diameter) to form the crust, and bake for 10 minutes. Remove from the oven and let cool.
  5. In a heatproof bowl, melt the white chocolate over a pot of simmering water, stirring until smooth. Remove from heat.
  6. In a mixing bowl, beat the cream cheese and sugar together until creamy.
  7. Add the melted white chocolate, egg, vanilla extract, and a pinch of salt to the cream cheese mixture, and mix until fully combined.
  8. Pour the chocolate mixture over the cooled biscuit crust and smooth the top.
  9. Bake for an additional 20 minutes or until the center is set but still slightly jiggly.
  10. Remove from the oven and let cool to room temperature, then refrigerate for at least 1 hour before serving.
