Ingredients
- Almond flour - 100 grams
- Coconut oil - 30 grams, melted
- Maple syrup - 30 grams
- Salt - 1/4 teaspoon
- Fresh cherries - 200 grams, pitted and halved
- Cornstarch - 1 tablespoon
- Lemon juice - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Water - 50 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix almond flour, melted coconut oil, maple syrup, and salt until it forms a dough.
- Press the dough into a 20cm (8-inch) tart pan evenly across the bottom and up the sides.
- Prick the bottom of the crust with a fork and bake for 10-12 minutes until lightly golden.
- In another bowl, combine the pitted cherries, cornstarch, lemon juice, vanilla extract, and water. Mix gently to coat the cherries.
- Pour the cherry mixture into the baked crust, spreading it evenly.
- Bake the tart for an additional 20-25 minutes until the cherries are bubbly and the filling is set.
- Remove from the oven and let it cool for at least 10 minutes before slicing.
