  • Avocado - 1 medium, diced
  • Lime - 1, juiced

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced zucchini, red bell pepper, red onion, and mushrooms to the skillet.
  3. Sprinkle in the cumin, smoked paprika, salt, and black pepper; stir well.
  4. Cook the vegetables for about 10-12 minutes, or until they are tender and slightly caramelized.
