Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the diced zucchini, red bell pepper, red onion, and mushrooms to the skillet.
- Sprinkle in the cumin, smoked paprika, salt, and black pepper; stir well.
- Cook the vegetables for about 10-12 minutes, or until they are tender and slightly caramelized.
- While the vegetables are cooking, prepare the avocado salsa by combining the diced avocado, lime juice, and chopped cilantro in a bowl; mix gently.
