- Lime - 1 (cut into wedges)
- Avocado - 1 (sliced)
Steps
- Heat olive oil in a skillet over medium heat.
- Add the drained jackfruit to the skillet and use a fork to shred it into smaller pieces.
- Sprinkle smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper over the jackfruit and stir well to combine.
- Cook for about 5 minutes, stirring occasionally, until the jackfruit is heated through and slightly caramelized.
- Add the BBQ sauce to the skillet and mix well, allowing it to simmer for an additional 5 minutes until the jackfruit is well coated and heated through.
- While the jackfruit is cooking, warm the corn tortillas in another skillet or microwave until pliable.
- To assemble the tacos, place a generous amount of the BBQ jackfruit on each tortilla.
- Top with sliced red onion, chopped cilantro, and avocado.
- Serve with lime wedges on the side for squeezing over the tacos.
