- Pork shoulder - 500 grams
- Lime juice - 60 ml
- Orange juice - 60 ml
- Garlic - 4 cloves, minced
- Onion - 1 medium, diced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaves - 2
- Corn tortillas - 4
- Fresh cilantro - 15 grams, chopped
- Red onion - 50 grams, diced
- Salsa verde - 100 grams
Steps
- 1. In a large bowl, combine the pork shoulder with lime juice, orange juice, minced garlic, diced onion, cumin, oregano, salt, and black pepper. Mix well to coat the pork evenly.
- 2. Place the marinated pork in a slow cooker or a heavy pot. Add the bay leaves and cover with a lid.
- 3. Cook on low heat for 6-8 hours in a slow cooker or on low heat on the stove for about 3-4 hours, until the pork is tender and easily shredded.
- 4. Once the pork is cooked, remove it from the pot and shred it using two forks. Discard any excess fat and bay leaves.
- 5. In a skillet, heat a little oil over medium-high heat. Add the shredded pork and cook until it is crispy, about 5-7 minutes.
- 6. Warm the corn tortillas on a skillet or open flame until pliable.
- 7. Assemble the tacos by placing a generous amount of crispy carnitas on each tortilla. Top with fresh cilantro, diced red onion, and salsa verde.
