Ingredients

  • Pork shoulder - 500 grams
  • Lime juice - 60 ml
  • Orange juice - 60 ml
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, diced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bay leaves - 2
  • Corn tortillas - 4
  • Fresh cilantro - 15 grams, chopped
  • Red onion - 50 grams, diced
  • Salsa verde - 100 grams

Steps

  1. 1. In a large bowl, combine the pork shoulder with lime juice, orange juice, minced garlic, diced onion, cumin, oregano, salt, and black pepper. Mix well to coat the pork evenly.
  2. 2. Place the marinated pork in a slow cooker or a heavy pot. Add the bay leaves and cover with a lid.
  3. 3. Cook on low heat for 6-8 hours in a slow cooker or on low heat on the stove for about 3-4 hours, until the pork is tender and easily shredded.
  4. 4. Once the pork is cooked, remove it from the pot and shred it using two forks. Discard any excess fat and bay leaves.
  5. 5. In a skillet, heat a little oil over medium-high heat. Add the shredded pork and cook until it is crispy, about 5-7 minutes.
  6. 6. Warm the corn tortillas on a skillet or open flame until pliable.
  7. 7. Assemble the tacos by placing a generous amount of crispy carnitas on each tortilla. Top with fresh cilantro, diced red onion, and salsa verde.
