Ingredients

  • Beef chuck roast - 400 grams
  • Onion - 1 medium, chopped
  • Garlic - 4 cloves, minced
  • Cilantro - 30 grams, chopped
  • Lime - 1, juiced
  • Dried oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Beef broth - 250 ml
  • Corn tortillas - 4
  • Avocado - 1, sliced
  • Radishes - 4, thinly sliced

Steps

  1. In a large pot or Dutch oven, heat a little oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Season the beef chuck roast with salt, black pepper, oregano, cumin, and chili powder. Place the seasoned meat into the pot, searing it on all sides until browned, about 3-4 minutes per side.
  4. Pour in the beef broth and the juice of one lime. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 3 hours, or until the beef is tender and easily shredded.
  5. Once cooked, remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot to soak up the juices.
  6. Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
  7. Serve the shredded beef in the warm tortillas, topped with sliced avocado, radishes, and chopped cilantro.
