- Beef chuck roast - 400 grams
- Onion - 1 medium, chopped
- Garlic - 4 cloves, minced
- Cilantro - 30 grams, chopped
- Lime - 1, juiced
- Dried oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Beef broth - 250 ml
- Corn tortillas - 4
- Avocado - 1, sliced
- Radishes - 4, thinly sliced
Steps
- In a large pot or Dutch oven, heat a little oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Season the beef chuck roast with salt, black pepper, oregano, cumin, and chili powder. Place the seasoned meat into the pot, searing it on all sides until browned, about 3-4 minutes per side.
- Pour in the beef broth and the juice of one lime. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 3 hours, or until the beef is tender and easily shredded.
- Once cooked, remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot to soak up the juices.
- Warm the corn tortillas in a dry skillet for about 30 seconds on each side.
- Serve the shredded beef in the warm tortillas, topped with sliced avocado, radishes, and chopped cilantro.
