- Water - 200 ml

Steps
- Juice the lemons until you have about 200 ml of lemon juice, making sure to remove any seeds.
- In a small saucepan, combine the water, sugar, and a pinch of salt. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let it cool.
- Once the sugar mixture has cooled, combine it with the lemon juice in a mixing bowl. Stir well to combine.
- Pour the mixture into a shallow dish and place it in the freezer.
- After 30 minutes, use a fork to scrape the mixture, breaking up any ice crystals that have formed. Repeat this every 30 minutes for about 2 to 3 hours until the sorbet is firm and fluffy.
- Serve the sorbet in chilled bowls, garnished with fresh mint leaves if desired.
