Ingredients

  • Organic cane sugar - 100 grams
  • Water - 200 ml
  • Pinch of salt
  • Fresh mint leaves - for garnish (optional)

Steps

  1. Juice the lemons until you have about 200 ml of lemon juice, making sure to remove any seeds.
  2. In a small saucepan, combine the water, sugar, and a pinch of salt. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let it cool.
  3. Once the sugar mixture has cooled, combine it with the lemon juice in a mixing bowl. Stir well to combine.
  4. Pour the mixture into a shallow dish and place it in the freezer.
  5. After 30 minutes, use a fork to scrape the mixture, breaking up any ice crystals that have formed. Repeat this every 30 minutes for about 2 to 3 hours until the sorbet is firm and fluffy.
  6. Serve the sorbet in chilled bowls, garnished with fresh mint leaves if desired.
