  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Green beans - 100 grams, trimmed and chopped
  • Vegetable broth - 500 ml
  • Tomato - 1 medium, diced
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.
  3. Stir in the diced carrot and celery, cooking for another 5 minutes until slightly softened.
  4. Add the zucchini, red bell pepper, and green beans to the pot, stirring to combine.
  5. Pour in the vegetable broth and add the diced tomato and bay leaf.
  6. Season with salt and black pepper to taste, then bring the mixture to a boil.
  7. Reduce the heat to low and let it simmer for about 15-20 minutes, until all vegetables are tender.
  8. Remove the bay leaf and stir in the chopped fresh parsley before serving.
