Ingredients

  • Fresh tomatoes - 500 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Red bell pepper - 1 medium, chopped
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Croutons - for serving
  • Parmesan cheese - for garnish (optional)

Steps

  1. Wash and chop the fresh tomatoes, red bell pepper, and onion.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and chopped red bell pepper to the pot, cooking for an additional 3 minutes.
  4. Stir in the chopped tomatoes and cook for another 5 minutes until they start to break down.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.
  6. Add chopped basil, salt, and black pepper to taste. Use an immersion blender to puree the soup until smooth, or transfer it to a blender in batches.
  7. Serve hot, garnished with croutons and grated Parmesan cheese if desired.
