- Fresh tomatoes - 500 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Red bell pepper - 1 medium, chopped
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Croutons - for serving
- Parmesan cheese - for garnish (optional)
Steps
- Wash and chop the fresh tomatoes, red bell pepper, and onion.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and chopped red bell pepper to the pot, cooking for an additional 3 minutes.
- Stir in the chopped tomatoes and cook for another 5 minutes until they start to break down.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes.
- Add chopped basil, salt, and black pepper to taste. Use an immersion blender to puree the soup until smooth, or transfer it to a blender in batches.
- Serve hot, garnished with croutons and grated Parmesan cheese if desired.
