Ingredients

  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Mushrooms (mixed varieties) - 300 grams, sliced
  • Vegetable broth - 500 milliliters
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the diced onion, carrot, and celery to the pot. Cook for 5-7 minutes until the vegetables are softened.
  3. Stir in the sliced mushrooms and cook for an additional 5 minutes, allowing them to release their moisture and become tender.
  4. Pour in the vegetable broth and add the chopped thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes.
  5. Season with salt and black pepper to taste. Remove from heat and let it cool slightly before blending if a smoother texture is desired.
  6. Serve hot, garnished with fresh parsley.
