Ingredients

  • Beef shank - 300 grams
  • Water - 1.5 liters
  • Carrots - 2 medium, chopped
  • Potato - 1 large, diced
  • Celery - 1 stalk, chopped
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Cabbage - 100 grams, shredded
  • Tomato - 1 medium, diced
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1, juiced

Steps

  1. In a large pot, combine the beef shank and water; bring to a boil.
  2. Reduce heat to low, cover, and let it simmer for about 1 hour to tenderize the beef.
  3. Add chopped carrots, potato, celery, onion, and minced garlic to the pot.
  4. Continue to simmer for another 20 minutes until the vegetables are tender.
  5. Stir in the shredded cabbage and diced tomato, and season with salt and black pepper.
  6. Cook for an additional 10 minutes until the cabbage is wilted.
  7. Remove from heat and stir in the chopped cilantro and lime juice before serving.
