Ingredients

  • Quinoa - 100 grams
  • Vegetable broth - 800 ml
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the quinoa under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.
  3. Add the minced garlic, diced carrot, celery, and red bell pepper to the pot. Sauté for an additional 5 minutes until the vegetables are slightly softened.
  4. Stir in the cumin and paprika, cooking for another minute to release their flavors.
  5. Add the rinsed quinoa to the pot, followed by the vegetable broth. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the quinoa is cooked and the vegetables are tender.
  7. Season with salt and black pepper to taste. Stir in the fresh parsley and lemon juice just before serving.
