Ingredients
- Leeks - 200 grams
- Garlic - 2 cloves
- Vegetable broth - 500 ml
- Heavy cream - 100 ml
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Wash the leeks thoroughly to remove any dirt, then slice them thinly.
- In a pot, heat the olive oil over medium heat and add the sliced leeks and minced garlic. Sauté for about 5 minutes until soft and translucent.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 15 minutes.
- Using an immersion blender, blend the soup until smooth. Alternatively, you can blend in batches in a regular blender.
- Stir in the heavy cream and season with salt and black pepper to taste. Heat through for another 5 minutes.
- Serve hot, garnished with freshly chopped parsley.
