Ingredients

  • Leeks - 200 grams
  • Garlic - 2 cloves
  • Vegetable broth - 500 ml
  • Heavy cream - 100 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Wash the leeks thoroughly to remove any dirt, then slice them thinly.
  2. In a pot, heat the olive oil over medium heat and add the sliced leeks and minced garlic. Sauté for about 5 minutes until soft and translucent.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 15 minutes.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, you can blend in batches in a regular blender.
  5. Stir in the heavy cream and season with salt and black pepper to taste. Heat through for another 5 minutes.
  6. Serve hot, garnished with freshly chopped parsley.
