Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced carrot and celery to the pot, cooking for an additional 5 minutes until they soften.
- Cut the chicken breast into bite-sized pieces and add them to the pot. Cook until the chicken is no longer pink, about 5-7 minutes.
- Pour in the chicken broth and add the bay leaf, paprika, salt, and black pepper. Bring the mixture to a boil.
