  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the diced carrot and celery to the pot, cooking for an additional 5 minutes until they soften.
  3. Cut the chicken breast into bite-sized pieces and add them to the pot. Cook until the chicken is no longer pink, about 5-7 minutes.
  4. Pour in the chicken broth and add the bay leaf, paprika, salt, and black pepper. Bring the mixture to a boil.
