Ingredients

  • Red bell peppers - 2 large
  • Yellow bell pepper - 1 large
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Basil - 1 teaspoon, dried
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the red and yellow bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
  3. Roast the peppers in the preheated oven for about 20 minutes, or until the skins are blistered and blackened.
  4. While the peppers are roasting, heat the olive oil in a medium pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  5. Add the minced garlic, salt, black pepper, paprika, and dried basil to the pot. Sauté for an additional 2 minutes until fragrant.
  6. Remove the roasted peppers from the oven and let them cool slightly. Once cooled, peel off the skins and chop the peppers into smaller pieces.
  7. Add the chopped peppers to the onion and garlic mixture in the pot, followed by the vegetable broth. Stir well to combine.
  8. Bring the soup to a gentle simmer and cook for about 10 minutes to allow the flavors to meld.
  9. Remove the pot from heat and use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  10. Stir in the lemon juice, taste, and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
