- Red bell peppers - 2 large
- Yellow bell pepper - 1 large
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Basil - 1 teaspoon, dried
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Cut the red and yellow bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
- Roast the peppers in the preheated oven for about 20 minutes, or until the skins are blistered and blackened.
- While the peppers are roasting, heat the olive oil in a medium pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic, salt, black pepper, paprika, and dried basil to the pot. Sauté for an additional 2 minutes until fragrant.
- Remove the roasted peppers from the oven and let them cool slightly. Once cooled, peel off the skins and chop the peppers into smaller pieces.
- Add the chopped peppers to the onion and garlic mixture in the pot, followed by the vegetable broth. Stir well to combine.
- Bring the soup to a gentle simmer and cook for about 10 minutes to allow the flavors to meld.
- Remove the pot from heat and use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the lemon juice, taste, and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.
