Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion, garlic, carrot, celery, and red bell pepper. Sauté for about 5-7 minutes until the vegetables are softened.
- Add the diced tomatoes and cook for an additional 3-4 minutes, stirring occasionally.
- Pour in the fish stock and add the bay leaf. Bring the mixture to a gentle simmer.
